Homemade Black Bean Soup

It has felt like fall for the last couple of days and the men of the family requested homemade soup or chili.  I had several cans of black beans on hand as well as onions, carrots, garlic, canned crushed tomatoes so I decided to make my version of this delicious soup.

Black Bean Soup

2-3 T. olive oil
2 small onions, diced
2 large carrots, peeled, quartered, and sliced
3 cloves garlic, minced
1 large can crushed tomatoes
1 can RoTel
4 cans Black Beans, drained and rinsed
2 packages vegetarian vegetable broth concentrate (from Trader Joe's)
2 large cans hot water
salt and pepper to taste

Saute onions and carrots in olive oil until tender.  Add garlic and stir for one minute.  Add remaining ingredients and stir.  Bring to boil, stir, reduce heat to simmer, and cover.  Continue to simmer for at least an hour, stirring occasionally.  Can simmer longer if needed.  Serve with either rice, crackers, cornbread, cheese, and/or sour cream.
